Show Us Your Life- Dinner Recipes
Today I am participating in my first " Show Us Your Life" from Kelly's Korner Blog. I am so excited about this "Show Us Your Life" because I LOVE to cook and LOVE to find new recipes so, this is perfect! Today I am sharing my Mom's homemade chicken & dumpling recipe. This is by far one of my favorite recipes that has been handed down to me.
Homemade Chicken & Dumplings
4 chicken breast
4 cups of self rising flour
1/2 cup of milk
1 stick of butter
lemon pepper seasoning
Add chicken into a large boiling pot of water. Make sure your water covers all of your chicken. Boil chicken for about 40 mins or until chicken is cooked all the way through. Once chicken is cooked, remove the chicken from the water and add a stick of butter ( this is creating your broth). While your broth is being cooked go ahead and start your dumplings... Mix about 4 cups of flour and one cup of your broth into a bowl. If the mixture is too runny or sticky add more flour. Make an area to create your dumplings by sprinkling some flour onto the counter. Get your dumpling mixture from the bowl and roll it out on the counter...I usually keep my dumplings at about 1/2 an inch thick. Once you have rolled out your dough, cut them into squares and add them to the big pot of chicken broth. Add a 1/2 cup of milk to your pot of broth and dumplings. While your dumplings are cooking you, go ahead and pull apart your chicken and shred it. Add your shredded chicken to the big pot. Add in your lemon pepper seasoning about 12-15 "shakes"... I add the lemon pepper seasoning to taste ( usually a lot!) but you can add however much or little you like. The lemon pepper definitely makes the flavor!
When I eat Chicken & Dumpling I usually served it with pinto beans. Something about those two go so good together! ENJOY!
