Patio Rice Recipe

Patio Rice is one of my favorite recipes! This recipes has been floating around on my Mom's side of the family before I was born. Patio Rice has become a staple item for Thanksgiving & Christmas dinners. It is such a good side to have with chicken, steak or any kind of meat! Yumm!

I made this with our shish-ka-bobs when were in Cape San Blas. Most everyone liked it just as much as I do... so I thought I would post the recipe here!

Patio Rice- serves 4

INGREDIENTS
1 cup rice
1 small onion ( I use Vidalia onions)
½ stick of butter
1 cup water
1 can mushroom soup
1 can beef consommé


Pre-heat your oven to 300 degrees. Put butter, rice and chopped onions in pan and brown. Add water, mushroom soup and beef consommé to the browned rice & onions. Stir. Transfer mixture to a baking dish and bake in the oven for 1 hour. Keep an eye on your rice around 40 minutes, depending on your oven it may be done...the rice should be brown and kinda of bubbling on top.
